Chicken and Broccoli

When I looked in my fridge yesterday morning I was surprised by the emptiness. I had just done a grocery run earlier that week. Our family is eating so much more food (whole food) and I needed to replenish. The only problem was that I had to make dinner before my next grocery run. Time to get creative! I had a pound of chicken breasts and some broccoli. I almost always have onions in our vegetable drawer so chicken and broccoli it was! Good stir fry sauce is easy to make so I whisked some together in a flash. I’ll leave you that recipe below but you can always use store bought teriyaki sauce if you have it on hand. Serve on top of your favorite rice. Here we go…

Ingredients

Stir Fry

• 1 lb chicken breasts cubed

• 3-4 cups broccoli florets

• 1 onion sliced

• Sauce

Staples: 1 tbsp olive oil, 1 tsp minced or powdered garlic, sesame seeds to garnish

Sauce

• 3 tbsp gluten free soy sauce

• 2 tbsp rice vinegar

• 2 tbsp honey

• 1 tbsp sesame oil

Staples: 1 tsp ground ginger, 1 tbsp corn starch to thicken if desired

Directions

Stir Fry

1. Coat a large skillet with 1 tbsp olive oil. Sauté onion and garlic on medium heat for 3 minutes. Add chicken and cook through until no longer pink inside, about 5 -10 minutes depending on the size of your cubes.

2. Add broccoli to skillet and cook until bright green.

3. Add sauce and stir. Transfer to a bowl and garnish with sesame seeds.

Sauce

1. Whisk together ingredients.

Serve stir fry on it’s own or on top of your favorite rice.
