This quick and simple sweet recipe is my favorite way to use up leftover chicken. I usually serve it over salad, stuff it into a pita, or place it on top of a toasted Udi’s bun. This recipe is great for lunch or a cold dinner. I hope it satisfies your sweet tooth like it does mine 🙂
• 1 gala apple (chopped)
• 2 cooked chicken breasts (shredded)
• 1/3 cup raisins
• Sweet Dressing – 5 tbsp light mayonnaise, 2 tbsp apple cider vinegar, 1 1/2 tbsp honey (whisked) + salt and pepper to taste
1. Place the first three ingredients in a large bowl. Whisk the dressing in a small bowl and pour over salad. Combine!
